Banana Kashi Muffins


These turned out really well...especially warm with a couple sprays of I Can't Believe It's Not Butter Spray.

1 ½ cup Whole wheat flour (you could also try just using dry oats, I might next time)
3 medium ripe bananas
1 cup cooking splenda
2 eggs (I think I will try just the egg whites next time as well)
½ cup unsweetened almond milk
1 ½ tsp baking soda
8 tbsp I Can’t Believe It’s Not Butter Light
½ tsp salt
4 cups Kashi Go Lean High Protein Cereal
1 tsp ground cinnamon
Directions
  • In a large bowl, cream butter and splenda until light and fluffy. Add the eggs, bananas and milk. Combine the flour, baking soda and salt; stir into creamed mixture just until moistened. Fold in the cereal.
  • Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 23-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm. Yield: 2 dozen.

1 muffin =  86 calories, 14g carbs, 2g fat, 4g protein
